Koukoumavlos – a short history of haute cuisine in Santorini

Renowned Chef Nikos Pouliasis set up Koukoumavlos in 1989 (the restaurant celebrates its 30th birthday in 2019). It has a reputation for being one of the best restaurants in Santorini, and consequently the whole of Greece. Over the years Koukoumavlos has won numerous awards, including the Toque D’Or for thirteen consecutive years. Chef Pouliasis is also known for his ability to transform ordinary ingredients into extraordinary original dishes. He is constantly inspired by Santorini and its produce and he certainly doesn’t stick to the rules!

What to expect from the creative menu…

Expect unusual combinations of ingredients and a true gastronomic adventure! Each dish is like a work of art. Many elements being weaved together to create something truly original. Upon reading the eclectic menu, you’d be forgiven for thinking that some combinations might not work. You’ll be surprised. There’s a wide range of starters to choose from. The notable scampi with a white chocolate, lime and ginger sauce served with golden herring carpaccio. Or gyros of marinated veal cheeks, tzatiki cheesecake and bergamot chutney (prices start at €16).

Celebrating 28 years at the top…

Main courses wow with such delights as lamb shoulder served with broad bean mousselline, dates and black chocolate. Or sample the beef fillet, chloro goats cheese sauce and black garlic mousse. You can also choose the Degustation Menu which celebrates the 28th anniversary of the restaurant (€74). Choose from sea bass tartar, grilled shrimps, ostrich burger or salmon followed by mandarin chilli ice-cream.

Finally to finish your exquisite meal you can opt for the highest quality cheeseboard or from a selection of desserts. A firm favourite is the dark chocolate mousse with Vinsanto, cocoa paste and blueberry sorbet. In addition another showstopper is the white eggplant tiramisu on a praline base with a citrus sauce and cherry ice cream.
